Meet Chef Darren
Chef Darren is the man who makes the magic happen. You may go your entire trip and barely see him, but you will know his work. Chef trained at a number of island hotels and found his home at TLB. Possessed of drive, a sense of humor, and always up for a challenge, you’ll be thinking of his meals long after you’ve returned home from paradise
Your Very Own Caribbean Restaurant
The team at TLB, led by Chef Darren will cater to your every culinary need. Whether it is a traditional Jamaican breakfast, traditional British fare, good old American burgers, or classics like jerk chicken or oxtail stew, you’re covered. When you arrive you will sit down with Chef and Lambert to go over your preferences.
The team will do your shopping and make sure that Chef has all the ingredients for your meals. They will also make sure that the cupboards are stocked with snacks and other treats (especially useful for those kids who will only eat Cheerios).
Much of the food used in your meals comes from the property and if you’re lucky enough to visit during mango season, you can pick your own fruit and have Lambert whip it into a smoothie (leaded or unleaded).
The team loves a challenge, so do your worst. And if you want to send down any recipes ahead of your visit, they are certainly welcome. The team can also accomodate any dietary restrictions, from vegetarian to carnivore, vegan to pescatarian, as well as any allergies.
